The Genesis ideal presented in the early chapters of the Hebrew Bible is vegetarian. Plant-Based-Diet: “Behold, I have given you every seed-bearing herb which is upon the surface of the entire earth, and every tree that has seed-bearing fruit; it will be yours for food.” (Hebrew Book of Genesis 1:29 quoted at a vegetarian Kabbalah website) Only after the ‘fallen humanity’ phase begins was there the beginning of meat-eating, and ritual animal sacrifice to atone for sins. Quite often, spiritual movements advocating going back to Eden, reentering a heavenly paradise, entering into a golden age, millennium, kingdom of God, or mystical reunion with God include vegetarianism as part of their spiritual path. There have always been some vegetarian Jewish groups, Nazarites, Essenes, the Therapeutae: https://medium.com/spiritual-awakening-radio-podcasts/meet-the-children-of-the-dawn-the-therapeutae-b98c846ed9f1#.y02qe4mvg Jesus movement, also Gnostics and Manichaeans. Even in Orthodox Christianity some of those early universally recognized church fathers like Clement of Alexandria and Hieronymus were vegetarians.
